Gourmet Magazine. Looking forward to a new issue each month. Reading them cover to cover. Discovering Anthony Bourdain in that mag through articles he wrote. Sourcing the ingredients to make a recipe. Drooling over the ads, imagining the dream kitchen I’d have some day… Wishing I had “trouble getting reservations” at the best new restaurant anywhere in the country or world, while living in my dump of an apartment eating a bag of Doritos.

Instead of Doritos, try making pop corn, add melted butter, shake on a handful of nutritional yeast, maybe some cumin or turmeric and salt. Contains no fake colors and is actually pretty good for you.

Thanks for the throwback menu! As I have been thinking about a side for our Xmas eve Prime Rib dinner the Braised Endive & Celery Hearts fit the bill to a T. Merry, Merry and Happy. Happy.

The unexpected but perfect use of “acidulated” in the mincemeat recipe!

“Put 6 firm Bartlett pears or Anjou pears, peeled, quartered, and cored, into a large bowl of water acidulated with the juice of 1 lemon.”

Which Gourmet year had the Buche de Noel for the Christmas menu? That was the year my sister and I made the entire meal (Mom stayed out of the kitchen the whole day), and the Buche was my favorite task. We would wait every month for the new issue to arrive, and go straight to the centerfold menu first. I miss Gourmet.

2 sticks of butter and 4 cups heavy cream, but who's counting? I had to recycle 20 years of Gourmet when we downsized, and I miss leafing through those back issues!

A true mincemeat?

Grandma, born in the 1800's, used the meat from a deer's neck for her mincemeat. I don't have the recipe but think it also used raisins. And it was delicious. Deer meat is sometimes available from country butcher shops. I think?
