Going to Tokyo soon and was thinking of trying Sushiso Masa but 35 different fish seems a bit much for me. Last time I went to a fabulous sushi place in Tokyo it was 15 fish and I felt stuffed after 9 and forced myself to eat three more and then I was done.
Such an interesting seafood soup/stew recipe. Just a totally straightforward typical ordinary everyday Italian tomato sauce, so clearly it's the quality of the seafood that takes it to such great heights. That and the business of refrigerating the fish for four hours and then cooking it right out of the fridge--I wonder what that does but I imagine it makes a great difference in the texture if not also in the flavors.
