We are so incredibly honored and so ecstatic you love the bench knife. I've been reading your columns and books since I was gifted Garlic and Sapphires when I started culinary school a long time ago. Thank you! -Noah, found of Forge To Table
Love to see recommend Ayako and family jams. I'm lucky to live in same town and she is at our farmers market on Saturdays. Besides selling jars of jam, you can get a giant slice of Japanese milk bread toasted with your choice of jam. So good!
As usual, Ruth, La Briffe is sensory overload. And that's good! I confess I had somehow missed, twenty-two years ago, Modern Library's Marcel Rouff's "The Passionate Epicure..." with your intro to series and Jeffrey's intro to English translation. I've borrowed it for now from archives.org and topped off my sensory overload by snagging a cheapie Kindle version in French.
In a weird coincidence 3 days after reading this column I was at Merrimans, a great restaurant on the Big Island of Hawaii, and the server came over to my son’s sashimi and offered to grate some fresh wasabi for him. It was delicious and the tool worked so well. It may become a stocking stuffer for my family.

The bench knife is beautiful… wish I had one.
Lee Valley Tools in Canada does a bowl scraper which is a star. Not an investment but one that really works. $9.50 Canadian.
Ruth and fellow commenters: I’m looking for some not-too-expensive fruit to buy as gifts for acquaintances. What are your recommendations?
Is there a recipe for the panettone you love here?
You know that I was chef patron of DB Boston and NYC before DB opened in Paris.
I love that film. Watched it three times.
