Bonjour Ruth, thank you for transporting me to Basque country. It's one of the few corners of France I've yet to explore. Those anchovies on toast look divine! They remind me of the sardines on toast I ate in Sevilla this spring. Oh and I just noticed there is a Fête du Piment this weekend in Espelette.

Thank you for transporting me! My husband says the best meal he has ever had was Arzak - he was working in kitchens in Spain and saved everything he made just to go. I will get there someday, thank you for the reminder!

We had an amazing lunch in late July at Arzak with our teenage daughters, and everything was perfect. But I particularly wanted to comment on how wonderful Elena is -- she came by our table several times, shared stories about her kids and expressed such gratitude that we brought our girls. It made a meal that was already special due to the peerless food even more so -- I can't really overstate what an amazing person Elena is!

The surprising part to me was how much seafood was on offer—I always had the idea that Basque Country was mountainous and nowhere near the sea.

It's got a long coastline along the Bay of Biscay and the Cantabrian sea (where the great anchovies come from).
